This 1975 photograph depicted this chef, who was shown washing his hands before he was to begin his food preparation duties inside this kitchen located in what had been a migrant labor camp. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with what at the time, was proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
