This 1975 image depicted what had been an example of a clean kitchen ventilation system, found during the inspection of a migrant labor camp kitchen, and the sanitary conditions inside. During a facility’s health inspection, all aspects of food preparation are observed, including the kitchen’s ventilation system, which over time can become clogged with grease, preventing proper airflow, and harbor pathogens that can then contaminate food. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
