This 1975 image depicted a metal door threshold of a migrant worker camp’s food delivery entrance, which had been installed in order to prevent a rat infestation. This metal threshold protected the bottom edge of the wooden door, preventing access to rats, which would smell the food inside, and attempt to gnaw through, using their large incisor teeth. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
