This 1975 image depicted a scene captured inside a migrant workers camp kitchen facility, revealing how improperly stored sharp cooking utensils can cause bodily harm to food preparation workers. Health inspectors are not only concerned with the transmission of pathogenic organisms, due to unsanitary conditions, or with toxic substance contamination, but also with the safety precautions to be taken to insure an environment is generally safe. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
