This 1975 photograph highlighted the poor sanitary conditions that were discovered in a kitchen within a migrant worker camp. Note that the foods were in disarray, and left uncovered, exposed to possible insects, as well as cross-contamination that could occur between the different food products. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with what at the time, was proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
