This 1976 image depicted a kitchen scenario in which a man was washing utensils and cooking paraphernalia, in a multi-basin, stainless steel sink filled with soapy water. Another man, acting as a health inspector, was taking notes, jotting them down on a clipboard, as to the employee’s dishwashing technique, as well as the general cleanliness of the kitchen environment. This image was used in a text entitled “Dixon, Tiller County/U.S.A.: A Teaching Reference Community”, by Robert E Sanders, which was used to instruct readers in what is entailed in the implementation of appropriate public health infrastructure in newly created communities.
