Description:These “red” potatoes, which were more of a maroon color, were on display in a marketplace produce section ready for sale to passing consumers. Even though these had already been washed by the producer, before eating, potatoes still need to be washed thoroughly with warm soap and water.
Often, when people think of potatoes, they mainly think of it as being a source of carbohydrates (26gm/one medium potato), though this tuber is actually a source of numerous vitamins and minerals. In fact, a human can survive in a healthy state with nothing more in his diet than potatoes supplemented with milk, or butter. Potatoes are a source of phytochemicals, i.e., antioxidants, carotenoids, i.e., free-radical scavengers and immune boosters, and naturally occurring phenols.
