Description:This illustration depicts a methylene blue-stained photomicrograph, which revealed the presence of numbers of Saccharomyces sp. yeast organisms.
A number of members of the genus Saccharomyces are important in the production of many foods. However, these fungi can also cause food spoilage in foods that are sugar-rich, i.e., syrups and juice concentrates. In some cases, overexposure to these organisms has been shown to result in a hypersensitivity, i.e., allergenicity.
