Description:Magnified 500X, this photomicrograph revealed some of the ultrastructural morphology displayed by the smut fungus, Ustilago maydis. In this particular view, numerous haploid sporidia are visible, as well as the organism’s septate hyphae.

U. maydis is a known cause of the disease “corn smut”, affecting the species of maize or corn, Zea mays, as well as the teosinte, Euchlena Mexicana. Though the proliferation of the fungus upon the corn cob leads to its destruction, the tumors, or galls, that are produced are eaten, especially in Mexico, where it is harvested just prior to the galls becoming fully ripened, and when added to foods, is said to impart a mushroom-like taste.
